The Linea
It has been over six years since Fred Scavone left his Ponticino in Chênée (on the edge of the bridge) whose culinary talent and exemplary kindness I have always appreciated. Before leaving, he had warned that he was going to « to refit a brand new restaurant in Spa to resume its activities in an entirely new setting »It must be admitted that he hadn't lied. With his father, they transformed, fitted out, embellished, demolished, rebuilt... The game was worth the candle: the Linéa has become a superb residence with multiple charms.
Near the Spa Monopole facilities, on the heights of Spa, this well-appointed house has been brought back to life. On the street side, a welcoming terrace awaits fine weather to greet you. On the side, another dining room can be discovered (each seating around thirty guests), equally pleasant, combining intimacy and comfort. You are invited in a friendly and smiling manner into a smart and bright setting that blends warmth and calm. Sandra, Fred's wife, will guide you, with a certain joviality one can only appreciate, to your table to offer her services. The tasting menu is a clever sequence of preparations as personal as they are inventive. Its five courses (gently priced at €58) follow one another: beef tartare (brioche, truffle and herbs), foie gras in almond crust, creamy egg, coquelet and lentils, vanilla chou craquelin: a brilliant succession of tastes and flavours according to the inspiration of the chef and his dedicated team, perfect for a wonderful time.
Italy is highlighted with an infinite and shared exploration of a wine map (exclusively Italian) of brilliantly selected wines at more than fair prices. Villa Les Erables estate is nestled in the greenery of the Fagnes. The 1880 manor house offers views of the Wayai valley and the wooded hills. Its strategic location is just a stone's throw from the historic center and the Spa thermal baths. Not to forget the presence of four charming rooms for a peaceful and serene evening stay.
