Furthermore, AOP ros\u00e9 wines are as diverse as the occasions on which they are enjoyed.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Provence and Valt\u00e8nesi offer a wide spectrum of flavours and styles to suit even the most eclectic tastes, from light and delicate to fruity and intense. Reconciling a local point of sale, artisanal manufacturing, and large-scale production was an incredible challenge 30 years ago. The initial idea was quite innovative as it consisted of offering fresh bread throughout the day. Previously, bakers worked in their workshops, mostly at night, and produced their entire daily output in a relatively short period of time. Their intention was to bake products all day long to offer the experience of a product straight from the oven, fresh and crispy no matter the time. Today, their baguettes and pastries are baked directly in the shops.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Success came very quickly, and the concept proved popular, attracting imitators. In seven years, 17 shops were opened, marking a first turning point in their history. And there would be others: the transformation of their image, the construction of a modern and efficient production site in Alleur, and the creation of the \"Atelier Gaufres\". They grew, admittedly rapidly, but always with the same desire to offer quality products with a unique taste and crispness. The figures alone can be dizzying: 140,000 baguettes per month, 20,000 \u00e9clairs, and 600 employees working to satisfy their increasingly demanding clientele.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The little bakery has become a real institution in the province of Li\u00e8ge. Every neighbourhood has \u00abits\u00bb Point Chaud, a meeting point in the morning for a \u00abhot\u00bb breakfast or at midday to pick up a sandwich, or in the afternoon to enjoy a slice of tart and a coffee. Little by little, they are expanding further from their Li\u00e8ge base: they are present in Namur, Charleroi and Brussels and are planning new openings in the near future. But, no matter how many Point Chauds there are, the recipes will remain authentic and the methods traditional.
